Method

Pound the cutlets thin between sheets of cling film, season with salt and pepper.

Three plates: flour, beaten egg, breadcrumbs. Pass the cutlets through in order, press the coating on only lightly.

Heat the oil with a little butter in a large pan — the fat should be finger-deep and properly hot.

Fry the cutlets 2–3 minutes per side until golden, swirling the pan so the coating puffs away from the meat.

Drain on kitchen paper, serve with a lemon wedge.
