Method

Slice the onions into rings and slowly fry in half the butter for 15 minutes until golden brown.

Heat the Spätzle in salted water (or make fresh), drain.

Grate both cheeses. Layer Spätzle and cheese in an ovenproof dish, pour in the milk, add nutmeg and pepper.

Dot the remaining butter on top, bake at 200 °C for 15 minutes until the cheese pulls strings.

Serve with the crispy onions and chives, green salad alongside.
