Method

Cut the meat into 3 cm cubes, brown in batches in hot oil, remove.

Slowly fry the sliced onions in the same pot for 15 minutes until golden, add the garlic and tomato purée briefly.

Off the heat, stir in the paprika and deglaze immediately with the wine — that way it does not turn bitter.

Return the meat, add the stock, caraway and marjoram, braise covered on a low heat for 2 hours.

Season — the onions have dissolved and thickened the sauce on their own.
