Method

    Slice the rolls thinly, pour over warm milk, leave for 15 minutes.

  2. 2

    Finely dice the onion, sweat with the parsley in butter, knead into the bread with the eggs, salt and nutmeg.

  3. 3

    Shape dumplings with wet hands, poach in simmering salted water for 15–20 minutes.
