Method

    Beat the flour, eggs, salt, nutmeg and about 150 ml water into a stiff batter until it bubbles.

  2. 2

    Push the batter in batches through a Spätzle grater or press into boiling salted water.

  3. 3

    As soon as they float, lift out with a slotted spoon, toss in butter.
