Put the potatoes on to boil.

Season the trout inside and out, squeeze lemon over, dust with flour.

Fry in half the butter 5 minutes per side until the skin is crisp.

Brown the remaining butter with the almonds until nutty, pour over the fish, serve with parsley and lemon.
