Method

    Finely dice the onion, garlic, ginger and carrots and sweat in oil.

    Toast the curry powder and cumin briefly, add the lentils, tomatoes, stock and coconut milk.

    Simmer for 20 minutes until the lentils collapse — stir now and then, they like to catch.

    Season with lemon juice and salt.
