Method

Deseed the pumpkin and dice with the skin on, chop the onion, garlic and ginger.

Sweat the onion, garlic and ginger in oil, toast the curry powder, add the pumpkin, pour in the coconut milk and stock.

Simmer for 20 minutes, add the chickpeas, stir in the spinach until it wilts.

Season with lemon and salt, serve with flatbread or rice.
