Method

Cut the fish into portions, salt, squeeze lemon over.

Whisk the flour, beer, egg and a pinch of salt into a smooth batter, rest for 15 minutes.

Heat the oil in a pot to 175 °C, pass the fish through the batter and fry for 4–5 minutes until golden.

Stir a remoulade from the mayonnaise, chopped gherkins and capers, drain the fish on kitchen paper.
