Method

    Flatten the roulades, season, spread thinly with mustard.

  2. 2

    Top each with two slices of bacon, onion strips and a gherkin wedge, roll up tightly, secure with cocktail sticks or string.

    Brown all over in hot oil and remove; roast the onion, carrot and celeriac in the fat, add the tomato purée.

  4. 4

    Deglaze with red wine, reduce, add the stock, return the roulades — braise covered for 90 minutes.

  5. 5

    Remove the roulades, strain or blend the sauce, thicken with slaked cornflour, season.
