Method

    Quarter the cabbage, remove the core, shred finely; dice the apples and onion.

    Sweat the onion in the lard, let the sugar caramelise, add the cabbage and apples.

  3. 3

    Deglaze with the vinegar and wine, add the bay, cloves, juniper and salt, braise covered for 60–90 minutes.

    Season — it should be sweet and sour, adjust with vinegar or sugar.
