Leftovers that become new dishes
Yesterday’s potatoes are fried potatoes, rice is fried rice, bread is dumplings. Cooking extra on purpose is a plan, not a mistake.
German cooking is leftover cooking — half the classics grew out of what was left the day before. Plan for it and you cook once on Monday and eat from it three times.
- Boiled potatoes → fried potatoes, farmer’s breakfast, potato salad, potato pancakes, mash
- Rice → fried rice with egg, rice salad, rice pan
- Pasta → pasta bake, pasta salad, fried in butter with cheese
- Stale bread → bread dumplings, poor knights, croutons, breadcrumbs, bread salad, cheese on toast
- Roast → sandwich filling, solyanka, goulash soup, meat salad
- Pancakes → pancake soup, filled and baked
- Vegetable scraps → stew, gratin, stir-fry, blended soup
- Dumplings → sliced and fried in butter, with egg
- Red cabbage, sauerkraut → better reheated than fresh; freeze.
