Keeping bread: bread bin, not plastic bag
In a stoneware crock or wooden bin bread stays good 4–5 days. In a plastic bag it moulds, in the fridge it goes stale.
Bread needs a place where moisture can escape, but not too fast: an unglazed clay pot, a wooden bin or a linen bag. Cut side down on a wooden board keeps a sourdough loaf three days without any wrapping. Rye and sourdough breads keep longest, white bread and toast the shortest.
Wipe the bread bin once a week with vinegar water — otherwise mould spores survive from loaf to loaf. Throw mouldy bread away entirely, do not cut it off: the mycelium reaches further than the visible spot.
