Method

    Soak the split peas overnight in cold water (unsplit peas absolutely need this).

    Render the bacon, sweat the onions, add the peas with their soaking water and the stock.

  3. 3

    Simmer gently for an hour, then add the root vegetables and potatoes for another 30 minutes.

    Add the sausages at the end and just heat through — do not boil.

    Season generously with marjoram, salt and pepper.
