Method

    Finely dice the onions, garlic, carrot and celeriac, sweat in olive oil for 5 minutes.

    Add the mince and fry until brown and crumbly, roast the tomato purée briefly.

  3. 3

    Deglaze with the wine, add the tomatoes, oregano, sugar, salt and pepper, simmer uncovered for at least 45 minutes.

    Cook the spaghetti al dente in plenty of salted water, toss with the sauce, Parmesan on top.
