Method

    Bring the milk to the boil with the sugar, vanilla sugar and a pinch of salt.

    Sprinkle in the semolina while stirring, cook for 1 minute, take off the heat and let swell for 5 minutes.

    Separate the egg, stir in the yolk, beat the white stiff and fold in — that makes it light.

    Serve with cinnamon sugar and cherries.
