Skin the sausage and cut with the cheese into fine strips, onions into thin rings, gherkins into slices.

Whisk the vinegar, oil, mustard, a splash of gherkin brine, salt and pepper into a dressing.

Mix everything, leave for 30 minutes, chives on top, serve with pretzels.
