Method

Peel and dice the potatoes, carrots and celeriac, clean and slice the leek, finely chop the onion.

Sweat the onion in butter until translucent, add the vegetables, sweat briefly, pour in the stock.

Simmer with marjoram and bay for 20–25 minutes until the potatoes fall apart.

Blend half the soup and stir it back in — creamy, but still with pieces.

Heat the sliced sausages in the soup, season with salt, pepper and nutmeg, scatter parsley over.
