Method

    Peel and finely grate the potatoes and onion, squeeze hard in a cloth.

    Mix with the eggs, flour, salt and nutmeg to a batter.

  3. 3

    Heat plenty of oil in a pan, add spoonfuls of batter and flatten.

    Fry 3–4 minutes per side until golden, drain on kitchen paper, serve at once with apple sauce.
