Boil the potatoes in their skins.

Dice the apple and gherkins, slice the onions into fine rings.

Stir the sour cream, yoghurt, lemon juice, sugar, pepper and chopped dill together, fold in the apple, gherkin and onion.

Cut the matjes into bite-sized pieces, lay in the sauce, leave for at least 30 minutes.
