Method

    Dice the bacon and render it in a large pot, sweat the onion in the fat.

    Add the diced vegetables and lentils, pour in the stock, add the bay leaf.

    Simmer for 30 minutes, then add the diced potatoes and cook for another 20 minutes.

    Add the sliced smoked sausage for the last 10 minutes.

    Season with vinegar, mustard, salt and pepper — salt only at the end, or the lentils stay hard.
