Slice the leek into rings and wash thoroughly, dice the potatoes and onion.

Sweat the onion and leek in oil until soft, add the potatoes, pour in the stock, simmer for 20 minutes.

Blend, stir in the oat drink, season with salt, pepper and nutmeg, chives on top.
