Method

    Soak the roll in water and squeeze out, knead with the mince, finely chopped onion, egg, salt and pepper, shape into balls.

    Bring the stock to the boil with bay and allspice, add the meatballs and poach gently for 15 minutes — do not boil.

    Remove the meatballs. Melt the butter, stir in the flour, whisk in 600 ml of the stock until smooth.

  4. 4

    Stir in the cream, capers and a splash of caper brine, season with lemon, salt and pepper.

  5. 5

    Heat the meatballs through in the sauce, serve with boiled potatoes.
