Method

    Dice the onions and apple and sweat in lard.

    Add the sauerkraut, juniper, bay and wine, lay the Kassler on top.

    Braise covered on a low heat for 45 minutes.

    Slice the Kassler, season the sauerkraut, serve with mashed potatoes.
