Method

    Separate the eggs. Whisk the yolks with the milk, flour, sugar, vanilla sugar and a pinch of salt into a smooth batter.

    Beat the whites stiff and fold in, add the raisins.

    Melt butter in a large pan, pour in the batter, cook for 4 minutes, turn.

    Tear into pieces with two forks, sugar over, let caramelise briefly, serve with icing sugar and apple sauce.
