Method

Wash the potatoes thoroughly and boil in their skins in salted water for 20 minutes.

Stir the quark smooth with the sour cream and milk, finely chop the herbs and red onion and fold in.

Season with salt and pepper, linseed oil on top.

Peel the potatoes at the table — or eat them skin and all.
