Method

    Peel the potatoes, boil in salted water until soft, mash with hot milk, butter and nutmeg.

    Peel and dice the apples, cook with a little water and sugar to a rough sauce; fold into the mash or serve beside it.

    Slowly fry the onion rings in butter until golden brown.

  4. 4

    Fry thick slices of black pudding crisp on both sides and arrange on the mash with the onions.
