Method

Coarsely grate the cucumber, salt, stand for 10 minutes, squeeze hard; stir with the yoghurt, garlic, olive oil, lemon and dill.

Slice the onions. Fry the gyros in batches in very hot oil until crisp, adding the onions at the end.

Warm the flatbread in the oven.

Serve the gyros with tzatziki, cabbage salad and bread.
