Method

    Top and tail the beans, cook in salted water for 8 minutes until al dente, refresh.

    Finely dice the onion, stir with the vinegar, oil, mustard, sugar, salt and pepper.

    Toss the lukewarm beans with the dressing, fold in the parsley, leave for 30 minutes.
