Method

Finely dice the carrots, slice the spring onions, chop the garlic, beat the eggs.

Get the oil very hot, add the eggs, let them set, break into pieces and remove.

Fry the carrots and garlic for 2 minutes, add the rice and peas and toast for 4 minutes, stirring.

Return the egg, add the soy sauce and spring onions, pepper.
