Method

    Peel and slice the potatoes, dice the bacon, slice the onions into rings.

    Render the bacon in butter, add the onions, then the potatoes, and fry everything crisp for 10 minutes.

    Beat the eggs with milk, salt and pepper, pour over the potatoes and let set over a low heat.

    Scatter with chives and serve with gherkins.
