Method

Clean all the vegetables and cut into bite-sized pieces.

Sweat the onion in oil, add the firm vegetables (potatoes, carrots, kohlrabi), pour in the stock.

Simmer for 15 minutes, then add the beans and leek for another 10 minutes.

Peas for the last 3 minutes, season, parsley over the top.
