Method

    Put the rice on. Finely chop the onion, garlic and ginger and sweat in oil.

    Toast the curry powder and cumin for 1 minute, add the tomatoes, coconut milk and drained chickpeas.

    Simmer for 15 minutes, stir in the spinach until it wilts.

    Season with lemon juice and salt, serve with rice.
