Coarsely grate the cauliflower or pulse it to rice-grain size in a blender.

Beat the eggs, set in hot oil, break into pieces, remove.

Fry the diced carrot, garlic and ginger for 2 minutes, add the cauliflower, toast for 5 minutes, stirring.

Add the peas, egg and soy sauce, spring onions on top, pepper.
