Method

Dice the onion and apple, sweat in oil, add the sauerkraut.

Add the juniper, bay, sugar and stock, braise covered for 20 minutes.

Fry the sausages in a second pan over medium heat until brown all round — do not prick them.

Season the sauerkraut, serve with the sausage and mash.
