Wash the potatoes, prick several times, rub with oil and salt.

Bake at 200 °C directly on the rack for 60–70 minutes until soft.

Stir the quark with the sour cream, chopped chives, salt and pepper; fry the onion rings golden in butter.

Cut a cross into the potatoes, press open, fill with quark, crispy onions and sweetcorn.
