Method

    Peel the asparagus from the tip downwards, cut off the woody ends; keep the peelings for stock.

    Cook in water with salt, sugar and a knob of butter for 12–15 minutes until it bends gently.

  3. 3

    For the hollandaise melt the butter; whisk the yolks with the wine over a water bath until creamy, whisk in the butter in a thin stream.

  4. 4

    Season with lemon, salt and pepper, serve with potatoes and ham.
